FIVE REFRESHING RECIPES FOR A ZERO WASTE SUMMER

August. Just saying the word makes you feel hot, right? Its at this point in the summer where temperatures reach their peak and when you get home the only thing you´re looking for is shade and cold liquid.

Thats why we´ve prepared a selection of zero waste recipes for you to stop sweating and cool your days wherever you go: picnic, work, the countryside, beach or just lazing around in the garden.

To start:

MICROBIOTIC FRUIT SALAD

In addition to fresh, healthy and zero waste, this seasonal salad is inspired by ´Cup of Jo’s´ monochromatic – Instagram hit salad. Ideal for a mid-morning snack or to serve as a dessert after a summer barbecue, whenever you have it, it´ll be a hit.

Ingredients:

1 quarter of watermelon
1 handful of cherries
1 handful of plums.
1 handful of raspberries (or blackberries from September).
1 peach
And any other red fruit you find, provided it is seasonal.

Preparation:
Cut the fruit into good sized chunks, give it a good hearty mix and Voila! – the perfect fruit salad.

Where to get the bulk ingredients:
In your usual greengrocer … or in your garden. To avoid plastic when buying smaller fruits, such as cherries or raspberries, bring your own stainless steel containers to the shops or market. The rest, you can put them directly in cotton bags to buy in bulk.

CHICK PEA AND CUCUMBER SALAD

This salad is based on the recipe of El Comidista and is a must in our summer menu for two reasons: Firstly – its delicious and secondly its so easy to make and take out with you to work or on a picnic.

Ingredients:

  • 400 grams of chickpeas.
  • 1 cucumber.
  • 1 Greek yogurt or 1 cup of couscous (for vegetarian and vegan diets) *
  • 1 lemon.
  • 1 tablespoon minced mint.
  • 1 tablespoon chopped parsley.
  • ½ teaspoon chopped dill.
  • Freshly ground black pepper.
  • Salt and a clove of garlic.

* We do not recommend combining yogurt with chickpea if you follow a vegetarian diet, since dairy reduces the absorption capacity of legume protein.

Preparation:

  • Cook the chickpeas.
  • Mix the yogurt with the dill, the mint, a pinch of lemon zest, salt, pepper and a chopped garlic for the sauce. If you are vegetarian or vegan, change the yogurt for a drizzle of olive oil and add half a cup of boiled couscous.
  • Peel the cucumber and cut it into cubes. When the chickpeas are cooked, mix together and add a dash of lemon juice and parsley and let it marinate for half an hour.
  • To eat – add a pinch of salt, the yogurt sauce and Enjoy!

Where to get the bulk ingredients:
Aromatic herbs, garlic and lemon, in your neighborhood greengrocer. Spices, couscous and chickpeas, at your nearest bulk store.

Yogurt, you can do it yourself without a yogurt maker or buy it in a reusable glass jar at any organic store or supermarket.

How to transport it:
Use a stainless steel tupperware to keep your salad fresh on the way to the office or picnic.

EASY PEASY HOME-MADE ICE CREAM WITH RIPE FRIUT

This recipe of has earned top prize with our children in the summer desserts category.  And no wonder, not only is it zero residue, simple and healthy, but it is also delicious.

Ingredients:

Any ripe fruit about to spoil that you have in the kitchen.
Yogurt or nut milk.
Chocolate, red fruits (optional).

Preparation:

Freeze the peeled and diced ripe fruit.
When you want to eat the ice cream, take out the fruit, add nut milk or yogurt and crush it.
If its a fruit that contains a lot of water such as melon, orange or watermelon, just add a small amout of juice and CRUSH!

Where to get the bulk ingredients:

If you have a local milk vending machine shop then that´s ideal, if not it can be easily delivered by your local milkman or supermarkets now sell a lot of dairy products in glass.

How to transport it:

We understand that you don´t want little sticky ice cream covered hands leaving the kitchen but if you need to we recommend to serve it in these stainless steel tumblers with slush straws.

MARION´S MUMS HOME-MADE OVEN BAKED YOGURT

Mums know best, and Marion´s mum knows alot.  This recipe for homemade yogurt from Marion’s mother will get your tummy rumbling.

Ingredients:

1 litre of whole organic milk.
1 yogurt

Preparation:

  • Bring the milk to a boil.
  • Remove from heat and lower the temperature to about 55 degrees by immersing part of the saucepan in cold water for a couple of minutes.
  • When the milk is at 55 degrees, add the yogurt.
  • Beat the mixture to avoid lumps and fill the glass jars.
  • Boil the cans full of the mixture to the water bath.
  • Bake at 50 degrees for 3 hours.
  • Let the yogurts cool and put them in the fridge. In 12-24 hours they will be ready to consume.

COOLING FRUIT WATER

Last but not least, something cool to drink. based on Jamie Oliver’s recipe its perfect to serve as an alternative to sugary drinks or to add a little refreshing joy to a barbecue at home.

Ingredients:

1 litre of tap water (you can filter it using the Binchotan activated carbon filter).
Any seasonal fruit (watermelon, peach, strawberries, lemon), mint or cucumber.
Ice cubes (if you don´t have an ice tray try these stainless steel ice cubes).

Preparation:

Fill a jug with tap water and ice cubes.
Choose the ingredients you want. For example, you can combine strawberries with mint, lemon and cucumber, or watermelon and peach.
Let stand 20 minutes et voilà! Ready to serve.

Where to get the bulk ingredients:
You can get everything you need at your usual fruit shop.

How to transport it:
The best companions of such a striking drink are, without a doubt, our glass jug sets with stainless steel drinking straw included. It will look good both in a simple glass with a straw and in a jug with a handle. And if you want to impress, serve it in this skull-shaped recycled glass bowl!
